  are there genetic variants which would make someone more at risk for gut pathogens, IBD, etc. ? the detox genes/ Crohns, etc? There must be because gut problems can tend to run in families.

  Yes, there are. For example, Chrons Disease has many genetic mutations associated with it – http://www.news-medical.net/health/Crohns-Disease-Cause.aspx.
