I have 3 tests, same patient, a year apart. Range from 16 LOW to 62 Normal to 127 HIGH. This is the patient with Chronic IBS-D. Any thoughts on what the flipping from HIGH to LOW means? Flips from HIGH to LOW to NORMAL chronologically.

This is likely just a transient shift in oxalate consumption (and excretion), as well as from production. If yeast is present oxalates will get produced too in low to moderate levels.
